Summer Refresher Salad

Ingredients:

Strawberry Mango Salad 
8 oz Mixed Field Greens 
½ cup Lightly Packed Basil Leaves (lightly torn) 
¼ cup Red Onion (thinly sliced) 
12 Strawberries (halved) 
6 Grape Tomatoes  
1 Mango (peeled and sliced) 
4 oz Toasted Almonds 
4 oz Dried Cranberries

Refresher
Quartered Cucumber
Watermelon Chunks
Red Onion (Thinly Sliced)
Mint (Freshly Diced)
Juice of ½ Lemon
1 Dip of Honey
Salt & Pepper
Feta Cheese

Mango Cilantro Vinaigrette

1 cup Honey
1 cup White Vinegar
2 tablespoons Lemon Juice
2 cups Vegetable Oil 
2 Mangos (peeled, sliced)
1 sprig Cilantro

Salt & Pepper

Grilled Shrimp
Grilled Chicken
Blackened Salmon

Instructions:

Salad:

In a large serving bowl, place strawberries dried cranberries and mango, lightly toss. Add salad, basil and onion- mixed together. Toss in tomatoes.  Drizzle with Mango Cilantro Vinaigrette. Sprinkle with toasted almonds.  Serves 2

Vinaigrette

Add all ingredients to food processor or use a mixer.  Blend completely until well incorporated. Salt and pepper to taste.  Chill in refrigerator.
