1 Mango (peeled and sliced)
4 oz Toasted Almonds
4 oz Dried Cranberries

Juice of ½ Lemon
1 Dip of Honey

1 cup Honey
1 cup White Vinegar
2 tablespoons Lemon Juice
2 cups Vegetable Oil
2 Mangos (peeled, sliced)
1 sprig Cilantro

Instructions:

In a small mixing bowl add watermelon, cucumber, red onion, mint and lemon juice. Toss. Lightly drizzle with honey. Salt and pepper to taste. Top with light feta. Serve in chilled ramekin.
Salad:
In a large serving bowl, place strawberries dried cranberries and mango, lightly toss. Add salad, basil and onion- mixed together. Toss in tomatoes. Drizzle with Mango Cilantro Vinaigrette. Sprinkle with toasted almonds. Serves 2
Vinaigrette
Add all ingredients to food processor or use a mixer. Blend completely until well incorporated. Salt and pepper to taste. Chill in refrigerator.
